Latium produces a large amount of white wine, usually of low quality. The best known are Est! Est!! Est!!! and Frascati. Frascati is made from Malvasia, Trebbiano, and Greco, it is traditionally fermented on its skins, giving it a golden color but a rustic, astringent style. This is slowly giving way to more modern winemaking with international varieties such as Chardonnay. As a general rule, the less the proportion of Trebbiano in the blend, the higher the quality of the wine. Orvieto also is largely based on Trebbiano.
