Stellenbosch has the most producers and is regarded as a high quality area. It has South-facing slopes that are cooled by the Atlantic. Constantia is the oldest area, with only Estates and private cellars, cool breezes off the water, protected by the mountains, best vineyards on the slopes. Paarl is the headquarters of the KWV and mostly home to cooperatives. It is a little hotter because it is farther inland. It produces 20% of the national crop.
