Kieselguhr is commonly used immediately after fermentation to remove large solid particles. It is used with a rotary vacuum filter. Wine is sucked by a vacuum into a drum through a bed of kieselguhr, and gross lees are removed. A variant that is totally enclosed, avoiding exposure to oxygen, is called the earth filter. Kieselguhr comes in various particle sizes, which can be used for simple clarification (coarse) to removal of yeast (fine).
